The ingredients you will need are:
- 80g of butter
- 80g of brown sugar
- 80g of plain flour
- 10g of corn flour
- 1 cup of water
- 1 stick of butter
- 1 tsp of sugar
- 1/2 tsp of salt
- 220g of plain flour
- 4 eggs 🥚
- 2 cups thickened cream
- 1 cup of milk 🥛
- 1 packet of instant pudding mix
First and foremost, my lovely, lovely friend agreed to help me with this baking process so whenever I say “I”, I really mean we.😂😂
I first made the cookie🍪, or coral bit, first. I mixed the butter with the brown sugar in a bowl and used a spatula to combine them both together till there were no butter lumps left.
You can even get a furry friend or a companion to help you while youre baking!
I then added the plain flour and corn flour and make sure everything is mixed well.
Again, you can ask someone to help you with this step if you wish.
If you would like the dough to be a particular colour, red and green for this instance, add the dye before placing the dough in the fridge.❄️
The dough was then put into the fridge till it was a little bit more firm (around 30 mins or more⌚️) and was taken out, rolled, and put into the fridge again.❄️
While the cookie dough is resting in the fridge, I started on the cream filling. Be careful not to over mix as the cream will have a granule like texture 😖. My chocolate cream mixture turned out that way. 😓 😓
With the instant pudding mix, you can use whatever flavour you want. I used a chocolate pudding mix for mine as well as vanilla for the other as I wanted to add a flavoured essence.(pandan in this instance – I believe pandan is more of an Asian thing) Mix all 3 ingredients into a bowl before using a mixer and mixing it till the cream is fluffy.I then put the cream in the fridge again to cool down.❄️
Last but not least is the main pastry component. I “cooked” the pastry over medium heat in a pot🔥 . Add the water first, followed by the butter, sugar and salt. Bring that mixture to a light simmer. 🔥
After that, add the flour and mix well until it becomes a dough like pastry. Take the pot off the heat🔥 and allow it to cool❄️ before adding the eggs or you will cook the eggs🥚. Once you feel that the dough is cool to the touch, add the eggs one by one and mix well in between.
Once the mixture is mixed, put it in a pipping bag an pipe as shown. ☝🏻
Then, use a cookie cutter of any shape, I used a flower shape 🌸 to mimic the appearance of a coral, to cut out shapes out of the cookie dough. Place the cut out cookie dough on the top of the pastry. Then place it in the oven at 200°C for around 15 mins or until golden brown.
Take them out on a cooling rack before adding the cream in the centre and there you have it!
